So I'm up to my eyeballs in fresh produce from the gardens of friends and family. Tomatoes, greens, onions, cucumbers, peas, string beans, peppers, summer apples, and berries. Mostly I eat it straight up raw with a little salt, because it tastes so good. Today for lunch I made refrigerator pickles, a green salad, and tomato basil soup with all the produce I had on hand.
If I can find someone who wants to get rid of zucchini, I'm craving oven baked zucchini fries and some zucchini latkes. I'm also waiting on the edge of my seat for fresh local peaches, Flaming Fury is my favorite variety and it usually doesn't ripen until next month. *sigh* I really, really love fresh produce.
